Domaine Beausejour’s Sauvignon Blanc
A few years ago, Lay’s potato chips launched a new slogan, “Bet you can’t have just one.” Having binged an embarrassingly large portion of the bag more than once, the reason the slogan did so well was because we all knew it was true. In a world of perfectly engineered food—McDonald’s ketchup with the perfect level of sweetness or a Cheez-It with an addictive level of cheddar flavor, we’ve moved past the overdone foods that beg you to stop at one tiny portion. In the same way, we’ve collectively moved past cloyingly sweet rieslings or pedal to the metal Chardonnay. Instead, refreshing and light, and also quaffable, are the words on everyone’s minds.
Domaine Beausejour’s Sauvignon Blanc, like a Lay’s potato chip, begs you take another sip, not because it’s engineered to make money, but because the wine has naturally achieved that perfect balance of ripeness and brightness. This wine is full of candied fruit sweetness and flowers on the nose, but is refreshing and bright on the palate. It is just the perfect level of softness. A green quality comes through nicely and finishes with white pepper and a complex, persistent finish. The perfect level of fruit. The perfect level of lift. The perfect level of herbs. The ability to achieve, naturally, a flawless balance, is the miracle of wine, and this wine is a perfect example of that.
